When it is tough take control of what you can - get your kitchen sorted & make it a practical work space.......
Have all the things that you need at hand.
Keep it simple, cook from fresh if you can.
Have spices, oils, herbs etc. within a hands reach. Keep chopping instruments sharp - it is far easier to cut your hand on a blunt edged knife....
Then enjoy - I poached some salmon, them added spinach, garlic & made a white sauce with dill & black pepper for seasoning.
And then pamper yourself .........
